Red Beans and Rice


1# Andouille sausage
1/2 # ham
1 medium yellow onion, chopped
4 cloves garlic, peeled
4 8oz cans red kidney beans
2 cups brown rice

Saute sausage and ham until brown, add onions
and garlic and continue to cook until the onions start to soften. Add beans and rice. Add 5 cups chicken stock and bring to a boil. Add salt and pepper

Add a few drops of hot sauce at the table to taste.

Red Beans and Rice is a necessary part of every
family get together, reunion, church supper.
